2025 (REDSHIRT JUNIOR): Mitchell played in 23 games and started 18 for the Falcons in 2025. He batted .274 in 73 at bats with an even 20 hits, three homers and 10 RBI. He was on base at a .316 clip. Mitchell had five multi-hit games and had six hits in the GSC Tournament.

2024 (REDSHIRT SOPHOMORE): Mitchell played in and started 28 games for the Falcons in 2024. He recorded 21 hits including two doubles and a homer while he drove in seven RBI. Mitchell drew seven walks and had an on base percentage of .321. He tied two career-high's against Spring Hill on Feb. 6 where he collected three hits and three RBI.

2023 (REDSHIRT FRESHMAN): Was named to the All-GSC Second Team...Played in 50 games and started 48 for the Falcons in 2023... in 153 at bats, Luke batted .359 with 55 hits... was tied for second on the team with 14 doubles, was fifth on the team with six homers and knocked in the fifth most RBI with 36... walked 22 times, had a slugging percentage of .569 and had an on base percentage of .463... threw out 13 base stealers out of 28 attempts.
